In ultimo unite anche la polpa frullata dell'arancio e gli albumi montati a neve ben ferma, mescolando delicatamente.&lt;/div&gt;&lt;div&gt;Foderate con della carta da forno uno stampo &amp;nbsp;(diametro cm. 28x15 ), versatevi il composto e mettete in forno già caldo a 170° per circa 50 minuti (se dovesse colorirsi troppo copritelo con un foglio di stagnola e comunque fate sempre la prova stecchino).&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;u&gt;&lt;i&gt;Per la preparazione della glassa,&lt;/i&gt;&lt;/u&gt; mescolate il succo d'arancio con lo zucchero a velo e unite anche la buccia grattugiata, deve risultare piuttosto denso quindi regolatevi con lo zucchero a velo.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Una volta sfornato il dolce, lasciatelo intiepidire e versatevi sopra con un cucchiaio la glassa.&lt;/div&gt;&lt;div&gt;Lasciatelo raffreddare bene fino a che la glassa si è indurita e servitelo tagliato a fette.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div class="separator" style="clear: both; Avvolgete l'impasto nella pellicola e lasciate riposare in frigorifero per qualche ora.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;&lt;u&gt;Per la preparazione della crema:&lt;/u&gt;&lt;/b&gt;&lt;br /&gt;sbattete i due tuorli con lo zucchero, aggiungete la buccia di limone grattugiata e la farina, sempre mescolando con una frusta per non formare grumi. Unite il latte freddo a poco a poco e quando il composto è bello liscio mettetelo sul fuoco basso e sempre mescolando lasciate cuocere fino a che la crema si è addensata e ha raggiunto la consistenza.Toglietela dal fuoco e lasciatela raffreddare.&lt;br /&gt;&lt;br /&gt;Stendete due terzi della pasta in una teglia, ricoprite con la crema e con la rimanente pasta fate le strisce per la decorazione e il bordo.&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; stendete delle palline di pasta (diametro cm.10 circa) non troppo sottili, farciteli con un pochino di salsiccia e qualche pezzetto di mozzarella, piegateli a metà e chiudeteli bene nei bordi.&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; Formate una palla e lasciatela riposare in frigorifero avvolta nella pellicola per almeno mezz'ora.&lt;br /&gt;&lt;br /&gt;Nel frattempo, preparate la crema: sbattete bene i tuorli con lo zucchero, unite la fecola, il latte tiepido e con una frusta mescolate fino a che non ci siano grumi. Cuocete la crema a fiamma bassa fino a che si è addensata.&lt;br /&gt;Togliete dal fuoco e aggiungete il cacao (o se preferite del cioccolato fondente fuso). Mescolate la crema e lasciatela raffreddare.&lt;br /&gt;&lt;br /&gt;Stendete due terzi dell'impasto (deve essere piuttosto sottile). Adagiatelo sulla teglia ricoperta di carta da forno, cospargete con la crema al cioccolato e ricoprite con la rimanente pasta.&lt;br /&gt;Sciogliete lo zucchero a velo con il limone e spennellate la superficie.&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both; Il composto deve risultare morbido come una crema ma non troppo molle, se dovesse essere troppo duro unite un goccino di latte.&lt;br /&gt;Lasciatelo riposare in frigor coperto da pellicola per almeno un'ora.&lt;br /&gt;Imburrate gli stampini (se avete quelli per le madeleine vanno benissimo). Io non avendoli, ho usato lo stampo a silicone con le formine a cuore e altri stampini ovali.&lt;br /&gt;Riempite solo per un terzo gli stampini con il composto e cuocete in forno preriscaldato a 180° per 10/15 minuti.&lt;br /&gt;Una volta fredde spolverizzate con zucchero a velo.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;div class="separator" style="clear: both;
