<u>Per prima cosa togliete la pelle al peperone in questo modo: </u><br />
mettete il peperone intero in forno caldo a 250° per venti minuti sopra un foglio di carta da forno, girandolo un paio di volte. Una volta tolto dal forno infilatelo in un sacchetto di plastica per alimenti, chiudete bene e lasciatelo così per 15 minuti. Trascorso questo tempo levate la pelle e i semini all'interno e lasciatelo raffreddare.<br />
Tagliatelo a cubettini e tenetelo da parte.<br />
<br />
<u>Per l'impasto:</u><br />
in una terrina, sbattete bene con una frusta a mano, le uova intere con il latte.<br />
Aggiungete l'olio, sale e pepe e sempre sbattendo, la farina setacciata e il lievito.<br />
Unite il parmigiano, le acciughe a pezzettini e i capperi.<br />
In ultimo aggiungete i peperoni e il formaggio a dadini.<br />

Mettete il composto negli appositi stampini (riempiteli fino quasi al bordo) e cuoceteli in forno preriscaldato a 180° per 25/30 minuti, fino a che saranno ben gonfi e dorati.<br />

Per prima cosa preparate la pastella, mescolatela bene per sciogliere i grumi.<br />
Aggiungete l'acqua a poco a poco fino ad ottenere una pastella piuttosto soda e bella liscia.<br />
Copritela e mettetela in frigorifero per qualche ora.<br />

Pulite delicatamente i fiori di zucca, togliendo il pistillo interno, passateli sempre delicatamente sotto l'acqua e lasciateli asciugare bene su un panno.<br />

Fate lessare le patate <u><b>con la buccia</b></u> in acqua bollente per 15/20 minuti.<br />
Tagliatele a metà per il lungo e fatele raffreddare.<br />
Una volta fredde scavatele con un cucchiaino tenendo un centimetro dal bordo e schiacciate quello che togliete con lo schiacciapatate.<br />
In una padella fate rosolare leggermente i cubetti di pancetta affumicata con una noce di burro.<br />
Aggiungete la pancetta con il suo sugo al composto di patate schiacciate e amalgamate bene.<br />
Prendete le patate svuotate e appoggiatele su un pezzetto di carta stagnola, mettete sul fondo un paio di fettine di mozzarella, coprite con il composto e finite con le fettine di formaggio filante.<br />
Chiudete il cartoccio <u><b>senza schiacciare</b></u> la superficie e mettete in forno già caldo a 200° per circa 15 minuti.<br />

Con un mixer sbattete bene (almeno per 15 minuti, è importante) le uova intere con lo zucchero fino a che siano ben montate.</div>
<div>
Aggiungete a poco a poco la farina setacciata, il pizzico di sale e il bicarbonato e, facendo attenzione a non smontare il composto, con una spatola amalgamate bene.</div>
<div>
Imburrate e infarinate la teglietta, versatevi il composto e mettete in forno preriscaldato a 165° per circa 35 minuti. Spegnete il forno, e lasciate raffreddare nel forno il pan di Spagna.</div>

<u>Crema</u>*</div>
<div>
Sbattete benissimo, sempre con il mixer i due tuorli con lo zucchero, aggiungete la farina, e sbattete ancora per qualche minuto.</div>
<div>
Unite il latte fatto scaldare precedentemente con la vaniglia (se usate il bacello, toglietelo) e fate cuocere a fuoco dolce fino a che la crema si è addensata. Fatela raffreddare.</div>
<div>

<div>
Nel frattempo, montate il "Dolceneve" (mezza dose) seguendo le istruzioni sulla confezione e tenetelo in frigorifero.</div>
<div>
Quando la crema è fredda unitela delicatamente al Dolceneve e amalgamate bene.</div>

<div>
Tagliate le fette di ananas a pezzettini piccolissimi e conservate il liquido che vi servirà per bagnare il Pan di Spagna.</div>

Una volta pronti tutti questi ingredienti, tagliate la fetta superiore del Pan di Spagna (1 cm.)</div>

gr. 320 di riso (per risotti)<br />
gr. 180 di gorgonzola dolce e cremoso<br />
una cipolla media<br />
mezzo bicchiere di vino bianco secco<br />
brodo vegetale<br />
gr. 30 di burro (o se preferite olio extra vergine di oliva)<br />
una noce di burro e parmigiano per la mantecatura<br />
<br />
Fate appassire la cipolla tritata fine con gr. 30 di burro.<br />
Aggiungete il riso, fatelo tostare per qualche secondo, unite il vino bianco e fatelo sfumare.<br />
Aggiungete a poco a poco il brodo e quando mancano circa 5 minuti alla fine della cottura amalgamate il gorgonzola a pezzetti e mescolate bene fino a che si avrà una bella consistenza cremosa.<br />
Togliete dal fuoco e mantecate con la noce di burro e abbondante parmigiano.<br />

Fate imbiondire la cipolla tritata con due cucchiai di olio.<br />
Aggiungete il riso e fatelo tostare.<br />
Unite il vino bianco, fate sfumare e poi a poco a poco aggiungete il brodo bollente. A metà cottura, unite un cucchiaio di prezzemolo e fate finire di cuocere il riso.<br />
Spegnete il fuoco e mantecate con tutto il parmigiano, il burro e l'altro cucchiaio di prezzemolo.<br />
Impiattate e servite.<br />

In una larga padella fate imbiondire la cipolla tritata con un paio di cucchiai di olio extra vergine, unite i piselli e fateli insaporire. Aggiungete i pomodorini tagliati a spicchietti, regolate di sale, pepe e se volete un pizzico di peperoncino. In ultimo mettete il tonno, ben sgocciolato e leggermente sbriciolato.<br />
Nel frattempo, lessate la pasta, scolatela e aggiungetela nella padella con il condimento.<br />
Fate mantecare bene aggiungendo un paio di cucchiai di acqua di cottura della pasta <br />
e servite.<br />

Nella macchina del pane con il programma impasto (si può fare benissimo anche a mano) mettete le due farine miscelate, aggiungete la patata lessata e schiacciata con lo schiacciapatate e unite ml. 100 di acqua tiepida in cui avrete sciolto il lievito e un cucchiaino di zucchero.<br />
Dopo qualche minuto aggiungete il burro fuso, l'olio e il sale.<br />
Impastate, aggiungendo eventualmente a poco a poco tanta acqua per ottenere un bell'impasto morbido ed elastico.<br />
Mettete l'impasto a lievitare in una terrina di vetro, coperto da pellicola e al caldo per 2 ore.<br />
Nel frattempo, per la farcitura, tagliate a pezzetti piccolissimi la patata e fatela rosolare in una padella con un goccino di olio, rosmarino tritato, sale e pepe.<br />
<br />
Ungete bene di olio la teglia, dividete l'impasto a metà, rivestite la teglia con un disco di pasta.<br />
Disponete sopra il gorgonzola, la patata rosolata e qualche cucchiaino di mascarpone.<br />

Per prima cosa fate lessare le patate in abbondante acqua. Una volta cotte, passatele con lo schiacciapatate.<br />
Aggiungete il prosciutto cotto e il salame tritati grossolanamente con la mezzaluna, il parmigiano, regolate di sale e pepe, unite l'uovo intero e una generosa grattugiata di noce moscata.<br />
Impastate bene tutti gli ingredienti e poi con le mani umide, prelevate l'impasto, inserite nell'interno un pezzetto di scamorza e formate le crocchette dando la tipica dorma cilindrica.<br />

Fate imbiondire la cipolla con un paio di cucchiai di olio, aggiungete la zucca a pezzetti e fate insaporire per qualche minuto.<br />
Quando la zucca si è intenerita, aggiungete il riso, fatelo tostare, unite il vino bianco e fatelo sfumare.<br />
A questo punto cominciate ad aggiungere il brodo (poco alla volta), regolate di sale e pepe e portate a cottura il riso (circa 20 minuti).<br />
Spegnete il fuoco, aggiungete il burro, il parmigiano e il rosmarino tritato finissimo.<br />
Impiattate e servite ben caldo.<br />

Con le fruste elettriche sbattete bene le uova intere con lo zucchero e un pizzico di sale fino ad ottenere un bel composto spumoso.<br />
Sempre sbattendo con le fruste, aggiungete lo yogurt, il burro fuso, la farina e la fecola setacciate, la bustina di vanillina e il lievito.<br />
Imburrate e infarinate uno stampo da ciambella, versatevi il composto e mettete in forno già caldo a 170° per circa 35/40 minuti (fate sempre la prova stecchino).<br />
